Red Velvet Cookie Stuffed Brownies

What you’ll need: 


3 tbsp unsweetened cocoa powder
1 tbsp chocolate protein powder
2 tbsp whole wheat flour 
1 tbsp sugar-free chocolate jello powder
1/2 tsp baking powder
2 packets for sugar substitute of choice 
1 pack of Red Velvet My Protein Bites cookies
1 tbsp white chocolate chips 
1/2 tbsp butter 
1/2 cup almond milk
1 egg 

Cream Cheese Frosting: 

 2 tbsp whipped cream cheese
1/2 tsp vanilla extract
1 tsp of sugar
1 tbsp vanilla protein powder of choice 
2 tbsp cool whip

How to Prepare:

Combine your cocoa powder, protein powder, whole wheat flour, jello powder, baking powder, and sugar** in a bowl and mix together. Next, melt your butter for about 20 seconds in the microwave (or until melted) and combine with egg and milk in a separate bowl and mix together.  Then, slowly pour in your wet ingredients into the bowl with the dry ingredients. Take your white chocolate chips and chop them to create a bigger volume to add into your brownie mix. Set aside about 1/3 of your chopped chips to decorate your brownies at the end!

** Brownie mix is not extremely sweet due to the cookie center and frosting adding in sweetness. Feel free to add according to preference :)

Go ahead and preheat your oven to 350 degrees Fahrenheit. For baking, I used a long ceramic rectangular tray, something that allows for even placement for cookies. Spray your tray and place the 3 cookies** on the bottom evenly spread out. Once the cookies are placed evenly, pour your brownie batter over the cookies. Once the oven is done preheating, allow the brownies to bake for 15 minutes.

** Save a small piece from one cookie to decorate 

While your brownies bake, its time to prepare your cream cheese frosting. Grab your cream cheese and place in a small bowl. Add in your sugar,  protein powder, vanilla extract and cool whip** Mix all the ingredients thoroughly until you reach a thick consistency.  Place in the refrigerator until ready to decorate your brownies. 

** I keep my cool whip frozen to keep a thicker consistency 

Remove the brownies and allow them to cool. I cut these brownies into 6 even rectangles. Spatula your cream cheese frosting onto each piece and decorate with your white chocolate chips and crumble the remaining piece of cookie you left behind AND enjoy!
