I went a little crazy in the kitchen testing out the new DIY gluten free protein mix that @myproteinbites sent me and I was quite full of (almond) JOY!
Makes 10 truffles
1 cup @myproteinbites DIY mix
1/2 cup unsweetened shredded coconut
1/2 cup plain greek yogurt
2 Tbsp honey
1/2 tsp vanilla extract
Chocolate of choice for coating
Whole almonds to garnish
✏️Mix @myproteinbites DIY mix and coconut in a large bowl, then add yogurt, honey, and vanilla and knead with hands to form a dough (it will be sticky).
✏️Let dough sit in bowl for 10 minutes to thicken a little, then roll batter into 10 balls and place in freezer while melting chocolate.
✏️Melt chocolate then over coconut truffles as desired and top each with an almond before chocolate hardens.
