What you’ll need:1 pack MPB Oatmeal Raisin Cookies
1/8 cup almond flour
1/8 cup pancake mix of choice (I used Bisquick)
1/3 cup almond milk
Maple or Pancake Syrup
1/2 tsp baking powder
How to prepare:
Taking your half banana, cut off a small piece to top your pancake with after. Then take the large piece, and the back of a fork mash your banana till it’s a loose thick like consistency. Add in your almond flour, pancake mix, baking powder, and almond milk. Mix all the ingredients together until it’s a semi-thick like consistency. You don’t want them too runny.
Using a cookie scooper, taking only one scoop onto a small nonstick skillet or pan (or spray with nonstick spray). Let it spread a little. Wait until you see bubbles appear on the top and using a spatula slide under and flip the pancake. Continue this process until you run out of the mix. This yields about 5 mini pancakes.
Side-note: So, I had never heard of maple butter but my mom bought some and it’s AMAZING. If you can get your hands on some I highly recommend it. It adds in a perfect touch of sweetness and rich maple flavor that you don’t need even need a lot!
Drizzle over your pancakes & crumble a couple cookies pieces. Pour over some maple syrup and ENJOY! 🥞
